Chili Beer Cheese Dip. Try this fabulous appetizer at your next fiesta or football party!It all begins with Tasty. Have you heard of this? It’s a Facebook page created by Buzzfeed that demonstrates how to make some ridiculously delicious foods. And not only are they delicious, they’re usually very easy to make and super creative. Every time they post a new awesome video, I think, “Darn it! Why didn’t I think of that!?!” Seriously, if you’re not already following, check them out. About a month ago they posted this video:

And, well, it went viral. All their stuff does! I’m so jealous! Lol.

Shortly after, I was at my parents house for my brother in-law’s birthday party and my mom decided to make it for an appetizer. I was sceptical it would even work. So often cheese mixes with things and then curdles. I mean, come on, beer? No way this wasn’t going to be the latest food fail….. It wasn’t. I was awesome! And the consistency stayed perfect! We dipped chip after chip after chip of this stuff! That’s when I got this idea. What if you put chili in it? How awesome would that be? Can you imagine your next round of chili cheese fries with this stuff??? Awesome!!

And just like the original, it was easy, and it came out perfect!! So good, I decided to turn it into dinner by making it the cheese in a huge pan of nachos. It was awesome! Naughty, but awesome! Give it a try!

Instructions:

Pour a bottle of beer into a saucepan and simmer for 2-3 minutes.

Add cream cheese and stir until combined.

Add shredded cheese and stir until combined.

Add chili, diced jalapeno, and green chilis.

Simmer for 3 minutes.

Ingredients
  1. 12 oz beer (Corona is preferable)
  2. 8 oz cream cheese
  3. 8 oz shredded sharp cheddar
  4. 15 oz beef or turkey chili, drained
  5. 1/2 jalapeno, seeded and sliced
  6. 4 oz diced green chilis
