Irish nachos are a staple at most American/Irish pubs, they use crispy sliced potatoes instead of tortilla chips. Somewhere between potato skins and regular nachos, this yummy dish can be topped with all sorts of goodies. I like to include bacon and green onions, like a baked potato. But I also make pico de gallo and serve it with sliced avocados as well. Typically cheddar cheese is melted over the potatoes but I really liked turning this classic Irish cheese into a yummy sauce. 

Kerrygold cheeses are some of  the best cheeses on EARTH (echo earth, earth, earth, earth). Dubliner is probably the most well known. Here’s the description from the website:

What might seem ambiguous is actually a well-balanced mix of cheese cultures and naturally occurring amino acids. This diversity pays off in its ability to be served alongside a full-bodied wine like Cabernet, a freshly pulled pint of Guinness, or simply melted between a few slices of crusty brown bread.”

Instructions:

Preheat the oven to 400 degrees.

Slice potatoes about ¼ inch thickness.

Toss potatoes in a bowl with olive oil and salt.

Lay out in a single layer on 2 greased cookie sheets. (Yes, grease the cookies sheets even with the oil. Potatoes love to stick!)

Bake for 12 minutes, flip potatoes, and bake for an additional 12 minutes until they are golden brown.

While you’re waiting, why not start on the sauce:

In a sauce pan, on medium heat, melt butter.

Sprinkle flour over butter until just incorporated.

Add milk and bring to a medium boil.

Add cheese and continuously whisk until cheese no longer sticks to the whisk. (about 5 minutes)

Once the potatoes are browned on both sides, lay them out on paper towels to remove some of the oil.

Assemble nachos by adding a layer of potatoes, sprinkling bacon and green onions, and then drizzling the cheese sauce over each layer.

Top with pico de gallo, and avocado.

Irish Nachos

Ingredients

Nachos

  • 10 red potatoes
  • 3 tbsp olive oil
  • 6-8 rashers bacon
  • green onion chopped
  • 2 cups pico de gallo or salsa
  • 1 avocado sliced

Cheese Sauce

  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 cup Kerrygold Dubliner Cheese
