Salsa made with roasted tomatillos may be the best thing you’ve ever dipped a chip into. It’s just magical. The flavor is as bright as the summer sun and will make you smile just as big.
If you’ve never played with tomatillos in the kitchen, I highly recommend it. They may look like little green tomatoes with a husk, but they taste nothing like their brethren. They’re much much sweeter, almost citrusy, like a tangerine. Yeah, if a tomato and a tangerine married, they would have a tomatillo child.
And roasting them amps up the flavor even more! It’s so easy too! Just cut them in half, lay them out on a greased cookie sheet and bake for 15 minutes at 400 degrees. Done! Throw in a few other awesome green things like serrano chilies and cilantro for a truely flavorful experience!

- 10 tomatillos, husked
- 1-2 serrano chilies, seeded
- 1 bunch cilantro
- 2 garlic cloves
- 2 tbsp lime juice
- Preheat oven to 425
- Slice tomatillos in half
- Roast tomatillos on a greased cookie sheet for 15 minutes or until skin blisters.
- Add all ingredients in to the food processor, blend to desired consistency
- Chill and serve.
