Apple Pie Pork Chops

Fresh apples simmered with sugars, spice, and everything nice in the slow cooker. Then lay down a few fat pork chops on top and let it simmer to perfection. That’s about all you have to do for this delicious dish. Let’s face it ladies and gentlemen, apples and pork chops go hand in hand. When you  put this winning combination in the crock pot, you get an effortless feast!

It’s late Fall here in the Pacific Northwest. That means rain, wind, and about 8 hours of light a day. Times like these, all I want cook are things that cook themselves in my trusty crockpot. That gives me more time to curl up on the couch in my robe with a cup of hot cider and watch bad TV. Can I get an amen? My motivation isn’t worth much, all the clouds and darkness really slow me down. Except for when it comes to making really good food in the slow cooker. That I can get up off my behind for and spend the rest of the day anticipating dinner. 

Apple pie pork chops is a cinch! Slice and peel the apples then spice them just like you would for a pie. Place them in the crockpot with a little chicken broth on high for a couple hours to soften. Toss the pork chops with brown mustard, honey, and rosemary. Place them over the apples and they cook themselves in about an hour. We like ours with mashed potatoes and stuffing. Ingredients
  1. 7 large apples, peeled and sliced
  2. 1/3 cup sugar
  3. 1/3 cup brown sugar
  4. 2 tbsp flour
  5. 1 tsp cinnamon
  6. ½ tsp all spice
  7. ½ cup unsalted Butter melted
  8. 1 tbsp lemon juice
  9. 1 cup chicken broth
  10. 2 lbs pork chops
  11. ½ cup brown mustard
  12. 1 tbsp honey
  13. 1 tbsp dried rosemary
Instructions
  1. In a large bowl, combine apples, sugar, brown sugar, flour, cinnamon, all spice, butter, and lemon juice.
  2. Place mixture in crockpot.
  3. Pour chicken broth over mixture.
  4. Cook on high for 2 hours.
  5. Meanwhile, toss pork chops with brown mustard, honey, and rosemary.
  6. Place pork chops over apples and cook for another hour.
